It's that time of year when Apples are abundant and smell so nice in the stores, you can't possible pass them up...
Here's a few "Apple Recipes"
Got these from someone at school......

APPLE SLICES W/CITRUS~YOGURT DIP

2~3 Empire Apples, cored and sliced.
1/4 c up lemon juice
1 cup plain lowfat yogurt
1 tsp grated orange rind
1/2 tsp grated lemon rind
2 Tbs honey
1 Tbs Orange juice concentrate

Dip the Apple slices in the lemon juice
to prevent browning.
Combine remaining ingredients.
Cover and chill thoroughly.
Arrange fresh apple slices on the platter,
serve with dip.
Yields 1~1/4 cups. Serving size: 1 Tsp.

GOLDEN APPLE SALAD

1 Golden Delicious or Crispin Apple,
cored and sliced.
1 Red Delicious or Empire Apple,
cored and sliced.
1 Banana, peeled and sliced.
1/2 cup red or green grapes,
halved and seeded.
Orange Yogurt Dressing
Lettuce

Combine all fruits, mix well.
Serve on lettuce lined salad plates with orange yogurt dressings... Yields' 3 servings

Orange Yogurt Dressing;
Combine 1/2 cup of plain lowfat yogurt,
2~3 /tbs orange juice and dash of nutmeg;
mix well...

BAKED APPLES
4 Baking Apples
***Cortland, Idared, Roma *I personally use Empire. [Embarrassed]

3 Tbs butter
1/3 cup brown sugar
3 Tbs chopped walnuts
1/3 cup of apple juice or water

Core Apples. Combine butter and sugar, and raisins and nuts and stuff into the cavity of apples.

Conventional Oven ~Arrange in a shallow dish, pour 1 Tbs of apple juice or water over each apple.
Bake at 350*'s.
For about 40 minutes, until tender.
Place on a serving dish, spoon sauce over fruit.

Microwave Oven ~Place apples in individual serving dish, pour 1 Tsp of apple juice or water over each apple. Cover with wax paper. Cook 8 minutes, until tender.

Note: 2 apples cookin 4 minutes.
Cooking time saved:
30 minutes~Exact cooking time will depend on variety and size of apples...
Makes 4 servings.

Personal Note..... [Smile]
I don't use the walnuts.
And basically only use butter inside the apple with a ton of brown sugar into and on top of and whatever falls out...
It's a thicker syrup at the end...

APPLESAUCE
2 Pounds Crispin or Idared 20 ounce apples
1/2 cup water
1/2 cup sugar, or to taste *optional*

Wash, peel and quarter apples.
Discard stems and bloosom ends.
***COMPOST OF COURSE*** [Wink] If you can!

Conventional Oven~
Combine apples and water in heavy saucepan.
Cover, bring to a boil and simmer over low heat, stirring often, 15 to 20 minutes, until tender.

Microwave Oven~
Combine apples and water in a 3 quart bowl.
Cover, cook 8 to 10 minutes, stirring halfway through cooking period.
Cooking time saved: 10 minutes.

Force fruit through a sieve or food mill. Add sugar to taste while hot. Cooking time depends on variety of apples used...

You can put in ingredients like cinnamon and nutmeg too, if you like it.
Makes 6 servings......

My next door neighbor said she found this one
surfin' somewhere's and she knew it would be something I'd like for the kids!!!
**Heck, me tooooooooooo!!!*

APPLE RAISIN MUFFINS
3/4 cup cooking oil
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1½ cups diced apples
1/2 cup raisins
1/2 cup chopped walnuts

In a large bowl beat oil and sugar with electric mixer for 2 minutes. Add eggs and vanilla and beat 1 minute. In separate bowl stir together flour, baking soda, cinnamon and salt. Add to creamed mixture and stir until just moist. Fold in apples, raisins and walnuts. Fill 12 greased muffin cups 3/4 full. (Can also use paper liners.) Bake at 400° for 25 - 30 minutes or until done. Remove from pan and cool on rack. Serve warm or cold.

Makes 12 muffins.

This is my kids favorite "do it themself" snack.

1 flour tortilla
1/4 cup chunky cinnamon applesauce
grated cheddar cheese

Spread the applesauce on the tortilla, sprinkle cheddar cheese on top, roll it up and zap it in the microwave about 15-30 seconds.

Its a quick,healthy,easy snack they can make after school.

APPLE CIDER RECIPE

1 gallon naturally sweet apple cider
1 cup brown sugar
4 cinnamon sticks, broken in half
1 Tablespoon whole cloves
1 Tablespoon whole allspice

(I personally like slices of apples and raisin's in mine too, but it is all by a matter of likes and dislikes, the apple's may melt away and the raisin's look a little plump by the end of it, but it does add a nice flavor to it.)

*You can tie the cinnamon, cloves, allspice together in cheesecloth or use a coffee filter tied with string, if you don't like the stuff floating in it.)
Combine cider and brown sugar in a large pot.
Add spices. Bring mixture to a slow boil.
Then turn heat down and simmer for 5 to 10 minutes.
(Take the bag of spices from pot if you did it that way.)
You can keep the Spiced Apple Cider warm in a crock-pot (slow cooker, on low setting.)
or I put it in my coffee pot and put it on my burner, I have 3 Mr. Coffee's type units..
15~18 servings.

Apple-Glazed Pork Roast

4 lb pork Loin Roast -- trimmed
1/4 c Apple juice -- non-sweet
Salt & pepper to taste
3 tbsp Brown sugar
6 Apples -- quartered
1 tsp Ground ginger

Rub roast with salt and pepper. Brown pork roast under broiler to remove
excess fat; drain well. Place apple quarters in bottom of crockpot. Place
roast on top of Apples. Combine apple juice, brown sugar, and ginger. Spoon
over top surface of roast, moistening well. Cover and cook on Low setting
for 10-12 hours or until done.

Here's an easy afterschool snack. Do ahead.
1.core the apple
2.peel or not your choice
3.fill the center with peanut butter
4.place the filled apple in fridge to chill the
peanut butter
5.slice in circles with the p.b. in the center
6.if you have pms put a few choc.chips in too.

APPLE CRUMBLE is my fav, This is my grandmas recipe

put 5-6 apples (sliced) in to baking pan

mix together

1 cup oats
1 cup flour
1 cup brown sugar
1 cup margrine

add as topping.

If you use a microwave able dish it only takes 10 mins, in the oven its about 40 and comes out more crisp like.
