I'm not real sure about the orange color - but if it smells off, it may have root rot - be sure you're not overwatering. They reeeeally don't like it! Other than that, I'm not sure why they would get orangey... May be someone else will know.
When you use it, you can just snip off a little piece. No need to cut the whole stem off.

I agree about it maybe being root rot...Mine will turn reddish in color when they need water, I tend to under water. They should not smell off.
