This year, I tried a new recipe that I love! Up until now, I've always made the traditional pastry using shortening but I found this recipe and I think I will continue to use it. Very light, tender and crispy!
Sour Cream Pastry
2 cups all-purpose flower
1/2 tsp salt
1 cup COLD unsalted butter cut into cubes
1/2 cup sour cream
1 egg yolk
Whirl flour, cubed butter and salt in a food processor until coarse crumbs form. Dump this mixture into a bowl.
Add sour cream and egg yolk and work until dough forms a ball. (I always use my hands for this)
Cut dough in half and shape each half into a disc. Wrap each in plastic wrap and put in fridge. Refrigerte at least 1 hour. Bring to room temperature before rolling.
This is enough for 2 9-inch pastry shells.

managed to go out and got everything, the filling tastes so good! I didn't have much confidence in myself to try the crust so I ended buying one of those frozen ones, next I'll try to snap a pic of the pie...this is why you should keep your camera close by so you won't forget! Well, that is if you still have time to snap that pic with everyone rushing down the stairs trying to get the first slice!

That's AWESOME Kenny!! And get this...after all my baking...I didn't even get a piece of pie! Instead of dessert, I went for more turkey, gravy and stuffing. Guess I'll hafta' bake another pie.

Search The Garden Helper:
1 can pumpkin pie filling
1 can sweetened condensed milk
2 eggs
1 tsp cinnamon
1/2 tsp each ginger, nutmeg, salt
Mix everything together and dump 'er in your pie shell.
Bake at 375 for (hmm..I dunno) 50-55mins I suppose.
I make my own pastry as well. If anyone would like the recipe, I'll post that too.
