Elephant Ears

My question will reveal how new I am at this but so it goes.. I have planted several elephant ears in large pots. They have successfully grown and show continuous growth. Now, rather then getting new leaves I am seeing what appears to be seed pods. What is the plant telling me and what can I do, if anything with the pods that are growing?
