Stir fry without the stir

Tried something different tonight and it turned out great. It is very colorful and such an easy dinner. Wanted to share.

Boneless pork chops
onion, chunked
garlic, about 5 cloves sliced
cherry tomatoes (a large handful or two)
yellow squash (or any squash or zucchini cut in chunks)
red, yellow and green bell peppers (sliced)
1 cup orange juice
1/4 cup soy sauce
1/2 tsp onion salt
1/2 tsp garlic powder
1/4 tsp ground ginger

Spray a baking dish, I did 8 pieces of pork so used a 9x13 pan. Layer the chops. Cover with the sauce mixture (OJ, soy and spices)

Bake that at 350 for 1 hour, covered. Remove from oven and top with all of the veggies and recover. Continue to bake at 350 for about 45 minutes.

Pork will come out very tender and the veggies nice and crisp.

Everything has a very tangy taste and is great over rice.

Hey Triss, this really sounds great! [thumb] I love pork, but I think I'm going to save this recipe until it gets a lot cooler! [Big Grin] I'm really not into making anything right now that requies me turning on my oven and heating things up any more than they are right now! [Eek!]

I can understand that Patti. I am going to try it with chicken as well. I love being able to put things together and stick them in the oven so I am not having to sit in the kitchen over the hot stove.

good idea Triss, I love stir fry but it always takes all that effort of standing & stirring as you mentioned! I will have to try this one.

Will try it also! wonder what my mom will say (prob something along the lines of Chinese people must use a wok to make stir fry not a pan, shame on you [me not you Triss!])
