Search The Garden Helper:
42 Reese's PBC miniatures (I use 48 cuz I have 2 24 cup mini muffin pans=48 cups)
1/2 cup (1 stick) butter of margarine, softened
1/2 cup lightly packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 egg
1/2 teas vanilla extract
1.5 cups flour
3/4 teas baking soda
1/2 teas salt
Step 1. Heat oven to 375*. Remove wrappers from PBC. Line small muffin cups w/ paper baking cups.
Step 2. Beat butter, brown sugar, granulated sugar, peanut butter, egg and vanilla until fluffy in large bowl.
Stir together flour, baking soda and salt; all to butter mixture, beating until well blended.
Shape dough into 1" balls, place 1 in each prepared muffin cup. Do not flatten.
(I find the dough a little easier to roll if it's chilled.)
Step 3. Bake 10 to 12 minutes until puffed and lightly browned; remove from oven.
Immediately press peanut butter cup into each cookie. Cool completely in muffin pan.
