Do dairy products don't bother her? I would have worried about that and the fat content. But then I don't know anything about birds.
I hope Lola enjoys the recipe and that you do too. I still have more to cut and paste lol.

Cheese-Stuffed Potatoes
4 Baking Potatoes
7/8 cup lowfat cottage cheese
2 Tbsp Whole milk
2 Tbsp Onion, minced
1/4 tsp Parika
1. Scrub potatoes and removed any blemishes.
2. Pierce potatoes by using fork prongs.
3. Cover potatoes with a moistened paper towel. Heat on high until tender, anywhere from 8 minutes to 15 minutes depending on the size of the potato.
4. Take the potato out of the microwave and slice in half lengthwise. Using a spoon, scoop out pulp, leaving about 1/4 inch thick shells, saving pulp.
5. Blend cheese, milk, and onion. Add potato pulp mix until light and fluffy.
6. Fill potato halves with mixture. Sprinkle paprika over potatoes.
7. Return to microwave to reheat, for one minute.
Note: if you want it even fluffier then add one beaten egg white to the cheese mixture.
