Holly Trees

I have holly trees coming up all over various sizes some have flowers but I never get berries......how to tell which is male and which are females

While both sexes will flower, only females will produce berries. That is pretty much the only way to tell the difference, unless you have a degree in botany. It is possible you have all male plants. If purchased at a nursery, they should already have them separated into groups by sexs. It can take a few years for new hollies to start bearing berries.
