Cookies(makes 2 1/2dozen)
1/2C butter 1/2C corn syrup 2/3C dark brn. sugar
1C old fashioned oats 3/4C flour 1tsp vanilla
Choco. Glaze
1/4C heavy crm. 1C semi-sweetchips 2tsp corn syrup
Preheat oven 375C(line c. sheet with parchment)
In saucepan, melt butter, syrup & brn. sugar stirring constanly till sugar dissolves. Increase heatto high, when mixture boils, removeand stir in oats, flour, & vanilla. Bake cookies 1 sheet at a time and work fast!. Drop 1/2 tsp. onto sheet and bake 8min or till bubbles. Let cookies cool 1-2min. Roll cookie around a wooden spoon handle creating tube. Repeat. If cookies become too brittle, return to oven for 30sec. Cool rolled cookies completely. Make choco. galze-heat crm in sml saucepan till scalded. Remove from heat& stir in choco chips & syrup. Cover, let stand 15min until choco has melted. Using wire whisk, gently mix glaze till smooth being careful not to create bubbles. When cookies are cool dip all or 1/2 of each into glaze. Chill 10-15min. Enjoy!!
