That sounds easy enough for even me to do and I am NO pie baker! And even better, it smells yummy, right from my computer screen...

You are so kind to share your recipes.
I'd like your opinion on spices.
I don't have any ginger.But I have pumpkin pie spice.The label says cinnamon,ginger,nutmeg,and allspice.
Would that work?
I've had this pumpkin pie spice about a year.
Do you think that it 's too old?

Duckie, it is fine to use pumpkin pie spice. I don't use a lot of store bought spices...I try to always grind my own freh spices. Store bought spices have a pretty long shelf life depending on how you stare them....I personally would replace them after a year though. This is a really great pie...it has become my new favorite!

2 cups mashed sweet potatoes
1/4 lb butter, softened
2 eggs, seperated
1 cup brown sugar, packed
1/4 tsp salt
1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup evaporated milk
1/4 cup white sugar
1 (9 inch) unbaked pie crust
Pre-heat oven to 400
Mix all ingredients EXCEPT egg whites & 1/4 sugar
In a cool bowl, beat egg whites till soft peaks form; add 1/4 sugar and then FOLD into sweet potato mixture.
Pour into pie shell and bake at 400 for 10 minutes. Reduce oven heat to 350 and continue to bake for 30 minutes or until firm.
