What is the best way for getting seeds from flowers?

Which kind of plants are you talkin' about?
Each flower has different ways they turn out,
some have pods, some have seeds that they come out of the middle of the flower, bulb like things.
Most of them have to be brown before you can harvest them.

I only have pansies right now, but after reading the postings on here(and also remembering once one of my neighbors up in Wyoming giving me a bunch of flowers for seeds - and me not really KNOWING how to seed them - BIG MESS) I just thought I'd ask. I suppose how to with pansies now - maybe more later.

There should be a little round pod that developes
in the middle of where the flower was..
It'll be little and green, as the seeds get bigger so should the pod like thing..
Kinda reminds me of a balloon, the more air in the bigger the balloon...
Should get about the size of a pea approx.
And it should darken in color from green to brown when the seeds are ready, also a clue that you may be too late is that the pod has opened up..
But sometimes, in the sides of the pods there's still some seeds hangin' on in the corners like..
And some pansies will re~seed themselves and over winter..
Although, most of the time they're a cooler weather type plant...spring and fall time.

Speaking of saving seeds from pansies, after many attempts at waiting and going out the next day to find open pods, I decided to bring a few in and dry them in a container. Those lil buggers POP when they are ripe and I got an explosion of seeds on my desk. Scared me to death. I stuck a piece of paper over the top of the drying pods and sure enough, another one popped and now I have seeds in my container!
