THIS sounds deelicious JM, as I do love pork dishes (even if my waistline doesn't) LOL
Is this a Georgian recipe?
I have never seen ampalaya but will look for it.

has 2 teenage grandchildren in Metter Georgia about a hundred miles from Savannah and they light up my life as do our 3 and 5 year old grandsons here in Michigan.

Pork
Bitter melon (ampalaya)
Egg plant
Tomato
Garlic
Ginger
Onion
Shrimp/fish paste
brown your pork pieces with the onion and garlic. add vegetables cut into serving size pieces and water to cover. simmer until it is all tender.
the more tomato you add, the less bitter it is.
if you don't know what ampalaya is, it looks like a large wrinkly/warty cucumber, very dark green. VERY BITTER!!
