Good for you!
I personally would leave the mother leaf on, until the plants have a chance to settle in a bit. I have never tried to start new plants from baby leaves, so I don't know if that will work or not. Barleychown may be able to tell you though. make sure your solo cups have holes in the bottom for drainage.
