a side note on that, during a time when my husband and i were under-employed, i supplemented our income by baking these and selling them. only by request and only for friends, but made grocery $$ that way!!

that is hard to say because there were so many variable, and sometimes i would just say "whatever you give me is fine". i would do things like deliver the cakes, or decorate them for birthdays or such. and, hard to believe it has been 10 years since i did that!
Search The Garden Helper:
- 2 c. flour
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 c sugar
mix all together then add- 1 1/2 c oil
mix well.add
- 4 eggs
one at the time, mixing well between each egg. then add- 1 tsp vanilla
finally add- 3 c grated carrots (just under a pound)
bake at 350 in 3 well greased, wax paper lined, 8” round pans about 35-40 mins, until the cake starts to pull from the edge of the pan. Remove from pans and remove waxed paper. let cool on wire racks while making the icing.Cream cheese icing:
- 8 oz cream cheese
- 1/2 c (one stick) butter or margarine – room temperature
- 1 ˝ box powdered sugar
- 1 tsp vanilla extract
- chopped nuts if desired (I have to make a “half & half” cake ‘cause I like the nuts but hubby doesn’t)
mix well the butter & cream cheese, add vanilla, mix well again, then add powdered sugar until spreading consistency, then add the nuts. Will ice one 3 layer cake.If cake is to be taken anywhere, it can be refrigerated (will cause the icing and cake to “settle”) and then wrapped in plastic wrap. Travels well (took one over 1000 miles once, was just as good when we got there)
