Does anyone have any ideas as to what you could plant under a deck that gets very minimal sunlight?

Hi Pam! There's lots of things available-off the top of my head, hostas, hydrangeas, astilbes, and, if there's some sunlight, azaleas do good in shady conditions. Bleeding heart too. There's groundcovers for shade, also. I recommend checking out www.bluestoneperennials.com You can do a custom search for your exact requirements-they have shrubs and other stuff besides perennials too. Good luck!
