Super Easy Parmesan Chicken

Makes 6 Servings

1 Jar Spaghetti Sauce
6 Tbsp Grated Parmesan Cheese, divided
1 1/2 lb(6) small boneless skinless chicken breast halves
1 1/2 cups Shredded low-moisture part-skim Mozzarella Cheese

Preheat oven to 375F. Pour Sauce into 13 x 9 baking dish. Carefully stir in 4 Tbsp of the parmesan cheese. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.

Bake 30 minutes. Uncover.

Top with mozzarella cheese and remaining 2 Tbsp parmesan cheese; continue baking 5 minutes or until chicken is cooked through 170F inside of meaty part of chicken and cheese is melted. Serve over hot cooked pasta, if desired.

I just finished making this and I did it half asleep. So now that it's done and I've wolfed it down I'm going to go take a nap lol. See you all later!

Me too I love cheese. It was a wonderful little dinner and I plan to repeat it tonight using more chicken. I definitely didn't get enough last night lol.

just bought some chicken tenders and a LARGE package of mozzarella [grin] (have sauce and grated cheese already).

i'll let you know how this turns out [Smile]

tammy, you didn't specify what size jar of sauce...so, i just eye-balled it and put enough sauce in to just about cover the meat.

depending on how thick the sauce is to begin with, you might want to take the foil off a bit sooner than 30 minutes as the meat will release some moisture as it cooks. the sauce was a bit thinner than i like...will just adjust the amount of covered cooking the next time i make this.

I'm glad you liked it. I only used enough sauce to fill about 1 inch in the bottom of the pan. So that when I rolled the chicken in it there was enough to coat it. My jar is 25 oz and it did just fine. Of course I misread the recipe and didn't cover it at all lol.

i used a little less meat and a smaller pan...was probably just about an inch of sauce, all told.

the can was 29 oz, i think? don't remember now...i used a bit more than half of it.

I used to make a quick Chicken dish in the Oven
with frozen chicken breasts and Kraft BBQ sauce,
and a cheddar cheese sprinkle...
cooked the same way, in oven w/tinfoil.
It was quick and easy...

I like the idea of using BBQ sauce too. I like to do a bunch of different things with chicken. Although southern fried is probably my all time favorite lol.
