Portobello Stack

Ingredients:

olive oil
crushed garlic
salt and pepper to taste
soy sauce
Portobello mushrooms

Preparation:

Mix all ingredients (except Portobellos), then cover each Portobello with the mixture. Grill over a flame as you would a hamburger patty, or sauté in a skillet. Make a Portobello stack by sandwiching mashed potatoes, roasted peppers, freshly cooked spinach and asparagus between two of the grilled mushrooms.

My God, that sounds good!
They had some beautiful portobello mushrooms last week at Kroger, but went yesterday and there was NONE!

They really are good...The grocery here doesn't always have the portobellos in, but when they do, this is what I have for lunch:)
