Pumpkin pie, pumpkin cookies, even bread. All sweet and yummy. But I Looove pumpkin as a vegetable with dinner.
Get a 'pie' pumpkin. They're smaller, sweeter, and less stringy than those big honker jack-o-lantern pumpkins, although you can use them too.
cut it open, take out the seeds and goo, cut out the stem and blossom end, peel and cut into chunks. Boil until fork tender (like you were going to make mashed potatoes) Drain well. Toss them back in the pot and smash, mash, 'em up. Add butter, salt & pepper. YUMMY!

Wrennie, could you just use the canned pumpkin for this since it's already mashed up?
Like just heat it and butter and S&P it?

I don't know [dunno] I guess read the can. If it isnt spiced I dont see why not. I like lumpy so the canned would be too mashed for me.
