I saw this in a book called The Kitchen Detective, by Chris Kimball. It sounds awesome, and I thought maybe some of you that have tomatoes growing like crazy might like to give it a try.

Pasta with Raw Tomatoes, Basil, and Mint

2 lb locally grown tomatoes, seeded and cut into 1/2-inch dice
1/2 C good olive oil
4 garlic cloves, crushed and peeled
2 T minced fresh basil
2 T minced fresh mint
salt and freshly ground black pepper to taste
1/4 t sugar
1 lb pasta

Put the tomatoes in a bowl. Heat 6 T of the oil in a small pan. When hot, add the garlic and cook for 4 minutes or until the garlic is lightly browned. Remove the pan from the heat, and let it steep for 10 minutes. Pour the oil through a strainer onto the tomatoes. Add the rest of the oil, the basil, the mint, 1/2 t of salt, and pepper to taste, and let it marinate for at least an hour. Taste and add more salt if necessary.
Cook the pasta, drain and toss in the bowl with the sauce. Serve immediately.
