Candied Violet or Rose Petals

30 violet & baby rose petals
1 egg white, beaten
1 cup superfine sugar

Separate petals, wash and dry them. Beat an egg white until foamy. Dip petals into egg white, then into very fine or sifted granulated sugar, coating evenly. Let dry in the refrigerator. Then store in a covered container until ready for use.

I was thinking of one of those dessert trays with the petit fors and such on them and then sprinkle the petals here and there as if it were random. But then I'm not a decorator. We need fernie and vanessa for that kind of stuff lol. I am very tempted to try them though if I can get some more roses going.
