taco cheese cake

Taco cheesecake

Yes I know it sounds odd but it's soo good but it makes a lot .. serves 6
Preheat oven to 325
1 cup crushed tortilla chips
1 TBLspn melted butter
1 lb ground round
1(1.25oz)pkg taco seasoning mix,(remove 1 tspn and set it aside).
2 TBLspn water
2(8oz) pkgs cream cheese soften
2 eggs
2 cups shredded cheddar cheese
1 cup sour cream
2 TBLspn flour
2 cups shredded lettuce
6 roma tomatoes diced ( (Squeeze fresh lime juice over then place in stainer.

Stir together tortillia chips and butter, press into bottom of springform pan..
Bake for 10 minutes.. Remove from oven and let cool completely
In a large skillet brown meat (although reciepe doesn't call for it I add minced garlic, onion, and jalopeno(1) to beef while browning> add to your taste.
Drain good and pat dry with paper towels. return to skillet and add all of taco seasoning except the 1 tsp. and add 2 TBLspn of water cook untill liquid evaporates, then set aside
Beat cream cheese untill fluffy,
add eggs one at a time and then the 1 tspn of taco seasoning and beat untill blended
Add the cheddar cheese and mix thoroughly
use a spatula and spread the cheese mixture about 1 inch up the side of crust pour all but about 2/3 cup of the cheese mixture into the crust and spread evenly.

Spoon in the meat mixture then use the remaining 2/3 cup and spread over meat.
In another bowl combine sourcream and flour blend well and spread over top of cheesecake
Bake at 325 for 30 minutes let cool ten minutes serve warm topped with a ring of shredded luttuce with diced tomatoes in center,, I usually sprinkle with finely chopped cilantro..
Can also be topped with roasted chopped green chiles green onions and/or black olives remove from springpan just before serving.

I served this at a Mary-Kay party with green apple martini's and stuffed fried jalopenos and it went over PRETTTTY Good! or maybe it was the martini's [lala]
