Misshaped potatoes and rubbery carrots

This year was our first garden in many years. Our potatoes, although good sized and delicious, were badly misshapen and really ugly looking. And I got lots of good carrots, but they started softening in only a couple days. Both are stored in the cellar, the temp is around 60 now but is 45 all winter. I welcome everyone's ideas! Thanks.

I know the carrots will crisp up if soaked in cold water in the fridge. I did this with mine last night but will be keeping them in the fridge now. So I recommend doing it the night before you eat yours. It is possible the potatoes were missing some nutrient or maybe the soil isn't fine enough, but rocky.
