droopy sunflowers. Can I cut the heavy heads?

The first head on my stout and thick sunflower stalk grew enormous and too heavy. Now my stalk keeps bending down. I supported it with strings but will it grow straight again? If I cut the head will it stunt the growth?

One year the head on my sunflower was so heavy
I had to hold it up with a post...

But if you cut the head off...
The plant/stalk should put out small side heads..
